We should have a section recommending some open source camera software.

One that comes to mind is ZoneMinder, Motion, Shinobi, Kerberos.io etc.

Related thread: Linux Surveillance Camera Software Evaluation (2018)
would have some things we should consider.

I think the only requirement should be that it is open source and can be self-hosted.

For the hardware section we could have a recommendation about Ubiquti's UniFi cameras. These can often be used with open source hosting solutions in addition to Ubiquti's proprietary software (which can be self hosted too).

Cameras are a bit like phones and firmware is going to likely be closed source due to patent licensing.
